Combining two great things can be a gamble. The result might be great, like mangos and chili, or not-so-great, like Cheez-Its and Nutella.

I went a step further and combined three great things: pesto, cinnamon rolls and biscuits. The resulting dish—made of biscuit dough, filled with pesto all in the familiar pinwheel shape of a cinnamon roll—hits the mark. 

I'd highly recommend making your own pesto for this recipe, like this dairy-free pesto or this vegan carrot-top pesto. However, using store-bought saves a lot of time and effort, which is sometimes worth it. 

Vegan Pesto Biscuit Rolls

    Ingredients

  • 1 cup almond milk
  • 1 tablespoon lemon juice
  • 2 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 4 tablespoon vegan butter
  • 3/4 teaspoon salt
  • 1/2 cup pesto

  • Step 1

    Preheat oven to 450˚ F.

  • Step 2

    Add lemon juice to almond milk. Set aside.

    In a large bowl, mix together dry ingredients.

    Add vegan butter and mash with fork until mixture has a sandy consistency.

    Make a well in the dough and slowly pour in the almond milk mixture while stirring. You may not need all of it—if the dough gets too sticky it will be hard to work with.

    Combine until just mixed.

    Place on a floured surface.

    Roll the dough out into a thin rectangle, using flour to make sure it does not stick.

    Top with pesto.

    Carefully roll the dough to form a log.

    Cut into even slices and place in a parchment-papered baking pan. Alternately, use a piece of string or unflavored floss to cut.

    Bake for 10-15 minutes until golden brown on top.
