Prep a batch of quinoa and get ready to use it in these fluffy pancakes, which are a filling and nutritious substitute for from-the-box ones. Plus, they’re super customizable — substitute walnuts for chocolate chips, leave out the walnuts, top with this pecan syrup or add a pinch of ground ginger and cloves to make it taste like pumpkin spice.

Cinnamon Quinoa Pancakes

    Ingredients

  • 1/3 cup qunioa
  • 2 eggs
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 teaspoon cinnamon
  • 1 teaspoon ground allspice
  • 1/4 cup walnuts (optional)

  • Step 1

    Cook quinoa by placing it in a pan and completely covering with water. Cook until quinoa is soft and absorbs all water.

    Add honey to quinoa and mix.

    In a separate bowl, combine eggs, salt, baking powder, cinnamon, vanilla extract, and nutmeg.

    Roughly mix ingredients.

    Add in quinoa and honey mixture.

    Grease pan with oil and turn heat to medium.

    Add approximately 1/4 cup of quinoa mixture onto pan and cook on each side of pancake for 3-4 minutes or until brown.
