Leftover Cheesy Mashed Potato Pancakes

  • Prep Time:10 minutes
  • Cook Time:5-7 minutes
  • Total Time:15-20 minutes
  • Servings:8 potato pancakes

    Ingredients

  • 2 cup leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 4 teaspoon chopped scallions
  • 2 slices cooked bacon
  • 1 egg
  • 1/2 cup flour
  • Vegetable Oil

  • Step 1

    Place mashed potatoes, cheese, scallions, and chopped bacon in a bowl and mix together until well combined.

    Add 1 egg and 2 tablespoons of flour to the mixture and mix together until fully combined.

    Create 8-10 patties out of mashed potato mixture.

    Heat between 2-4 tablespoons of oil over medium heat and fry potato patties for 4 minutes each side or until golden brown.
