After many childhood summers spent eating watermelon on the beach, spitting the seeds at my unsuspecting friends, with the juice running down my cheeks and arms, I always equate watermelon with summer. It’s a delicious way to rehydrate after a long day in the sun due to its high water content, and can even prevent or help ease a sunburn. Even though nobody really gets tired of eating watermelon by itself, (sorry in advance to the watermelon purists out there) sometimes it’s nice to mix it up. And that’s what this watermelon refresher is for. This icy summer drink is creamy, light and refreshing. Drink up! I promise you’ll enjoy it.

Cook Time: 1 minute
Total Time: 4 minutes

Servings: 1

Ingredients:
¼ watermelon
1 cup ice
¼ cup milk of choice
1 mint leaf (or ½ teaspoon mint extract)
1 teaspoon honey

Directions:
1. Cut the watermelon into cubes. You only need about 8 medium-large pieces.

2. Put watermelon, milk, ice, mint and honey into the blender.

3. Blend until smooth, pour into a cup and enjoy!
