We did an awesome partnership with Wine Awesomeness for their September issue, and came up with some pretty dank recipes.

Wine Awesomeness fights against the typical misconceptions about wine by making it accessible and interesting to all people. To them, wine doesn’t have to be pretentionous “because at the end of the day wine is just fermented grape juice.” – Wine Awesomeness

Their September issue focuses on 6 wines, 3 red and 3 white, from Italy. We came up with a recipe to pair with each one inspired by the Italy (obvi) and the region the wines are from.

Every recipe is 10 ingredients or less. First up, an eggplant caponata — a traditional dish of Sicily to pair with a Sicilian wine.

Eggplant Caponata

  • Prep Time:15 minutes
  • Cook Time:23 minutes
  • Total Time:27 minutes

    Ingredients

  • 1 medium eggplant, diced
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 1 celery stalk, chopped
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 avocado, diced
  • 1 jar capers, drained
  • Olive oil
  • Step 1

    In an oiled pan over a medium heat, cook eggplant about 8 minutes until soft.

  • Step 2

    Remove eggplant from the heat and set aside. Re-oil the pan and add onion and celery. Cook until soft, about 7 minutes.

  • Step 3

    Add in tomatoes, cook another 3 minutes.

  • Step 4

    Set veggies aside. In the same pan, add red wine vinegar and sugar and cook until sugar dissolves, about 2 minutes.

  • Step 5

    Add capers and cook for another 2-3 minutes.

  • Step 6

    Add vegetables back into the pan and cool until vinegar mixture dissolves into the vegetables.

  • Step 7

    Transfer caponata dish into a bowl and add diced avocado.

  • Step 8

    Season with salt and pepper.

  • Step 9

    Serve with crusty bread or on its own, as a side dish or appetizer.
