Like most people, I hold a very special place in my heart for ice cream and, inevitably, ice cream sandwiches. I've also noticed this treat is becoming increasingly popular at restaurants as well. Personally, I find the traditional cookie and ice cream combination so boring. But waffle ice cream sandwiches? Now that's interesting! Add in Oreos and you've got a winning summer treat.

You could easily use frozen waffles for this recipe, but I find it more fun if you make your own. The great part about these waffle ice cream sandwiches is that everyone can enjoy them. Finding a person who dislikes this interesting take on a classic is damn near impossible. I've even included a version without Oreos for friends who don't like chocolate or can't eat it. If you bring these to any summer hangout, you're sure to be the life of the party!
