This vegan Parmesan ‘cheese’ is so good it might just make you reconsider Beyoncé’s 22 day vegan challenge.

If you can’t bear the thought of giving up cheese, think again. Or, if your plant-based diet makes you feel left out at meal time while everyone else piles high their salads and pastas with Parmesan, think again too. Say goodbye to the inflammation and bloating effects of dairy products and say hello to deliciously garnished meals once again.

Ingredients: 

1 cup cashews (roasted or raw)
5 tablespoons nutritional yeast
1½ teaspoons salt

Directions: 

1. Measure all ingredients into a small food processor.

2. Process ingredients until a fine texture (like real parmesan cheese) is achieved.

3.  Store in an airtight container at room temperature.

Serve on pastas, salads…anything your little heart desires!
