I used to buy vegan coconut almond date rolls from the store all the time, until realized how effortless it is to make them. With only three ingredients necessary, this recipe is so simple and it's dorm friendly, because the only equipment you'll need is blender (I used my Nutribullet). This recipe is completely vegan, paleo, and gluten-free, but whatever you're diet is, I highly recommend to indulge yourself with these rolls.
Not only are dates a superfood, packed with fiber, antioxidants, and energy; both almonds and coconut flakes are packed with tons of protein, fiber, and vitamins. It's a sweet, healthy treat that will leave you feeling guilt-free.
Coconut Almond Date Rolls

- 2 cups dates pitted
- 1 cup shredded coconuts
- Sliced almonds
Pulse the dates in a food processor or blender and grind up until a smooth, even consistency.
Form mixture into tiny logs or balls and roll in the shredded coconut until covered.
Garnish with a sliced almond and chill until firm.
