With Mother’s day right around the corner, make your mom proud with a dense vanilla cake filled with luscious lemon curd that is as bright and sunny as the queen herself. So show your mom that you’re officially an adult this year with a cake that says “I love you!” as well as “I can bake without burning the dorm down!”
This Lemon Curd Cake Will Make Your Momma Proud

- 1 baked vanilla cake
- 1 cup lemon curd
- 1 cup heavy whipping cream
- 3 tablespoon confectioners sugar
- 1 teaspoon vanilla extract
Begin by cutting your cake into layers. We cut ours into three, but feel free to stick with just two layers if you’re worried about messing it up. Use a breadknife for best results.
Combine the confectioners sugar, vanilla extract and heavy whipping cream. Whip until you achieve stiff peaks.
#SpoonTip: Fold in a tablespoon or two of lemon curd to your whipped cream for an extra punch of lemon.
Transfer half of the whipped cream to a piping bag fitted with the tip of your choice.
#SpoonTip: If you don’t have a piping bag, a resealable plastic bag with the tip cut off works just as well.
Pipe a ring of whipped cream around the edge of the first layer of cake.
Fill the center with the lemon curd and top it with the second layer of cake.
Repeat steps 4 and 5 for the next layer of cake.
Frost the sides of the cake with the other half of the whipped cream.
Use the remaining whipped cream to decorate the rest of the cake. Make your mom proud.
Cut and serve the cake to the most important queen (sorry, Beyoncé) in your life: your mom.
