Can’t commit to a full-sized carbs? Lessen your guilt and make mini hasselback potatoes. It’s like portion control topped with cheese, sour cream, butter, and whatever else you can think of.
Mini Hasselback Potatoes
- Prep Time:5 minutes
- Cook Time:45 minutes
- Total Time:50 minutes
- 1 lb small potatoes
- 4 slices of cheese
- Olive oil
- Chopped scallions
Set the oven to 400°F.
Make slices across potato but make sure not to cut all the way through.
Place on baking sheet lined with foil and rub in oil and season with salt.
Bake for 30-35 minutes, or until potatoes are soft.
Take potatoes out of the oven and place small slices of cheese in between cuts and place back in the oven for another 10 minutes.
Let the potatoes cool and garnish with whatever your little heart desires!
