Pumpkin Tiramisu in a Jar

    Ingredients

  • 1/4 cup boiling water
  • 1 tablespoon instant coffee
  • 4 oz cream cheese
  • 1/4 cup pumpkin purée
  • 1/3 cup powdered sugar
  • 2 teaspoon pumpkin pie spice
  • 1/4 cup whipped cream
  • 9 gingersnap cookies
  • Step 1

    In a shallow bowl, stir together the water and espresso powder.

  • Step 2

    In another bowl, stir together the cheese, pumpkin, powdered sugar, and pumpkin pie spice.

  • Step 3

    Dunk each cookie in the espresso mixture, and make one layer with 4 of the cookies in a mason jar.

  • Step 4

    Spread half of the pumpkin mixture and top with half of the whipped cream.

  • Step 5

    Repeat one more time with the remaining cookies, pumpkin filling and whipped cream. Chill for at least an hour.
