While pumpkin spice is chic and in, candy corn is clearly not. Despite this sad global hatred for candy corn, it is my guilty pleasure. Yes, I love candy corn. Regardless of any personal bias toward candy corn, the combination in this Chex mix is undeniably perfect.
The tart cranberries, salted pecans, crunchy Chex, and sweet candy corn create a balanced bite. The taste evokes a nostalgic happiness by combining the epitome of elementary school birthday parties and Halloween. One bite with all of the components and you'll be sold too, I promise.
Pumpkin Spice Chex Mix

- 2 cups Cinnamon Chex Cereal
- 2 cups Honey Nut Chex Cereal
- 2 cups Wheat Chex Cereal
- 1/2 cup dried cranberries
- 1/2 cup candy corn
- 1 cup pecans
- 2 tablespoons vanilla
- 2 tablespoons honey
- 3 tablespoons pumpkin pie spice
- 3 tablespoons butter
Melt butter in microwave and add vanilla.
Mix in cereals, pecans, and pumpkin spice until coated.
Microwave, stirring on minute intervals until the mix starts to to brown. Add in cranberries.
Let cool, and add in candy corn. Enjoy!
