The paleo diet is pretty restrictive. It can make it hard to be an adventurous cook, especially for breakfast. I can go a month eating only eggs for breakfast from either laziness or lack of creativity. This muffin recipe has gotten me out of this rut.

My willpower is pushed to the limit whenever I crave the kinds baked goods I ate before going paleo. However, with these paleo blueberry muffins I can trick myself into thinking I am indulging. These muffins are easy to make, delicious, and packed with protein to power you through the day.

It’s easy to make variations of this recipe by adding nuts, lemon juice for a citrusy brightness, or protein powder (my personal favorite).

Paleo Blueberry Muffins

    Ingredients

  • 6 eggs
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla
  • 2 tablespoon stevia or monkfruit
  • 1/2 cup coconut flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup blueberries

  • Step 1

    Crack 6 eggs into a bowl.

    Add 1 teaspoon of vanilla and 1/2 cup of coconut oil.

    Add 2 tablespoons of either stevia or monk fruit. Maple Syrup can be substituted as well.

    Add the coconut flour and baking soda, whisk together until smooth.

    Using a spatula, fold in the blueberries.

    Line a muffin tin, then fill each cup almost to the top.

    #SpoonTip: These muffins don’t rise a lot, so filling the cup up is not an issue.
