What's better than cookies? Cookies you can make and eat in under 10 minutes. These pumpkin cookies require no baking and can be made easily in an apartment or dorm room.
What better way to celebrate fall? If you're not sick of pumpkin yet, here's what you'll need.
Healthy No Bake Pumpkin Chocolate Chip Cookies

- Dry Ingredients:
- 3/4 cup quick oats
- 1/2 cup oat flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- Stevia to sweeten
- A pinch pumpkin pie spice
- Wet Ingredients:
- 1/3 cup canned pumpkin
- 2 to 2 1/2 tablespoon almond milk to consistency
- 1 tablespoon oil
- 1/2 teaspoon pure vanilla extract
- Chocolate chips as desired
If you don't have oat flour, simply blend dry oats in a blender until a flour consistency is formed.
Mix all of the dry ingredients in one bowl, stirring ingredients evenly.
Mix all wet ingredients in a separate bowl, stirring ingredients evenly.
Combine wet ingredients into dry ingredients and stir until you have formed a cookie dough consistency. (These are made without eggs so it's okay to lick the bowl).
Form cookie dough into balls or any shape as desired and garnish with more cinnamon.
Stick in the fridge to firm or eat right away! (You can even eat them out of the freezer.)
