Quiche is one of those foods that I always loved and wondered how it was made, but never came around to making quiche myself until I found myself having extra time up my sleeve this summer to whip up my own version of a quiche recipe.   • Crust:
  • 2 sticks butter cut into pieces
  • 2 1/2 cups flour
  • 4 tablespoons ice cold water
  • 1 teaspoon salt
  • 1 teaspoon sugar

    For the crust, cut the butter into small cubes and put them it into electric mixer. Mix in salt and sugar. Add the flour into the bowl with the butter/sugar mixture and mix until it is coarse.

    Add ice water, a tablespoon at a time, and knead the dough with your hands. Divide the dough in half and make two disks. Refrigerate for about an hour.

    Roll out the dough on a floured surface and then carefully unroll it in the pie plate. Arrange the dough so that it fits right in the pie plate. Bake for about 10 minutes at 350ºF.

    For the filling, in an electric mixer, beat the eggs until you can no longer see a difference between the yolks and the egg whites. Then add the heavy cream until completely combined. Add 1/2 tsp of salt.

    Remove the pie dough from the oven and add the filling. Add any other filling as well. Bake for approximately 30 more minutes or until golden brown.

1. Caramelized Onion & Bacon Quiche

  • 1 tablespoon butter
  • 1 teaspoon thyme
  • 1/2 lb bacon

    Preheat the oven to 350° F. Prepare the dough as shown above. Bake the dough for about 10 minutes. Meanwhile, while the dough is cooking in the oven, it is time to prepare the filling.

    In a sauce pan, cook the bacon until it is golden, but not completely crispy. In a separate sauce pan, melt the butter and add sliced onions. Cook until they are golden brown.

2. Spinach & Mushroom Quiche

  • 1 medium sized onion
  • 2 tablespoons olive oil

    In a large skillet, heat olive oil. Cook the onions first. Once they are slightly golden, add the mushrooms and cover the skillet. Finally, add in the spinach and garlic and cover the skillet until the spinach has wilted.

    Prepare the basic quiche recipe above. Cook the chicken breast in a sauce pan, chop up the broccoli and bring it to a boil, and finally, in a small sauce pan cook the chopped onion with a little bit of butter.
