I don’t know about you guys, but whenever I order guacamole at Chipotle I cherish it as if eating that savory, creamy mush is my only chance of surviving the grind of a full week of school. I don’t think it’s an exaggeration to say I probably would have dropped out of school if it wasn’t for an occasional side of guacamole to let me know that there is a light at the end of the tunnel. That said, paying $2 every time I need some emotional support from my favorite Mexican grill is getting a little expensive for my college budget, so I’ve been on a mission to recreate the taste for a fraction of the price. Below, you will find the product of weeks of trial and error, concluding with a product that I think is very close to the real deal. The key is perfectly ripe avocados, plenty of salt and lime juice, and a pinch of inspiration from the greatest fast food restaurant in the universe.

Servings: Makes one large bowl of guacamole (approximately 3 cups)
3 Haas avocados
1/2 jalapeño pepper, seeded and minced
1/4 red onion, finely chopped
2 tablespoons fresh cilantro, finely chopped
1/2 lime, juiced (lemon works too)
1/2 tablespoon salt (add more or less to taste)

1. Cut the avocados in half, throw away the pits, and scoop the pulp out into a large bowl.
2. Immediately coat the avocados in lime or lemon juice to preserve the fresh, green color
3. Fold in the chopped onions, jalapeño and cilantro until most of the avocado chunks are gone and the veggies are fully incorporated.
4. Add salt to taste (Keep in mind you can always add more, but you can’t undo a over-salted batch of guac)
