Lemon is usually considered a spring flavor, much like floral-patterned dresses. However, with all of the unorthodoxy surrounding elections in America, who are we to say that tradition trumps flavor? These lemon curd cookies are an easy last second dessert to take to holiday parties in the upcoming season, and will add a refreshing splash of color to any spread.

Lemon Curd Cookies

    Ingredients

  • 1/4 cup confectioner's sugar
  • 1 1/4 cups flour
  • 1 pinch salt
  • 1 1/2 tablespoon lemon juice
  • 1/2 cup butter room temperature
  • 1 egg yolk
  • 1/2 cup lemon curd

  • Step 1

    Preheat your oven to 350°F. Cream butter and sugar until smooth and pale.

    Beat in egg yolk, salt, and lemon juice.

    Beat in flour.

    Roll dough into 1-inch balls and place on a cookie sheet, preferably covered with parchment paper. (I used tin foil, because I did not plan ahead.) Use a floured finger to make deep-ish indents in each ball. This is where the curd will go.

    Bake for 18-20 minutes until firm and light gold on bottom.

  • Step 6

    Fill indentations with curd and bake for a few more minutes to set everything. Lightly dust with confectioner's sugar before serving.
