I saw this recipe on one of the blogs I follow the other day and took a double-take. Cookie dough-stuffed chocolate chip cookies? If chocolate chip cookies are made by baking cookie dough, what in the world is a cookie-dough stuffed chocolate chip cookie?

Well, let me enlighten you. First, you make egg-free cookie dough, roll it into little balls, and freeze it. Then, you make regular chocolate chip cookie dough and wrap it around the frozen ball of cookie dough, then bake it. You end up with these huge, gooey chocolate chip cookies that are filled with cookie dough. It’s crazy, I know, but it’s so delicious!

Right out of the oven they are so warm and gooey and just perfect. I mean just look at all that chocolatey goo in the photo above. Once they’ve cooled they’re not quite as gooey but they’re still really soft in the middle from the cookie dough and very yummy.

Cookie Dough-Stuffed Chocolate Chip Cookies

    Ingredients

  • COOKIE DOUGH
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 tablespoon milk
  • 1 cup flour
  • 1 cup chocolate chips
  • COOKIES
  • 3/4 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 1/4 cup flour
  • 1 1/2 cup chocolate chips

  • Step 1

    Make the cookie dough: Using an electric mixer, beat all the cookie dough ingredients and mix well.

    Roll the cookie dough into small balls of about 2 teaspoons of dough and place on a parchment-lined cookie sheet. Place in the freezer and let chill until completely hardened, at least 1 hour.

    Make the cookies: Preheat the oven to 375ºF. Using an electric mixer, beat the butter with the sugars until fluffy.

    Add the egg, egg yolk, and vanilla and mix well.

    Add the salt, baking soda, and flour and mix until combined. Add in the chocolate chips and mix well.

    Remove the frozen cookie dough from the freezer and place nearby. Take a tablespoon of the cookie dough you just made and flatten it in the palm of your hand. Then, place a ball of frozen cookie dough on top and wrap the cookie dough around the frozen cookie dough.

    Roll into a ball between your hands to round it out, then place on a parchment-lined baking sheet. I fit 9 cookies per sheet because they’re quite large.

    Bake the cookies in the preheated oven for 8 to 10 minutes, or until golden brown around the edges. Let cool slightly before serving (although they’re best eaten warm).
