As delightful as those may be, sometimes I'm looking for a bit more oomph in my pancakes. Please your body and tastebuds with these super quick and extra satisfying oatmeal chocolate chip pancakes. And guess what, they're gluten-free. Hard to believe, right?

Oatmeal Chocolate Chip Pancakes

    Ingredients

  • 2 cups oat flour ground up oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup plain Greek yogurt
  • 1 cup unsweetened almond milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/3 cup chocolate chips

    In a bowl, mix together the oat flour, baking powder, salt and cinnamon.

    In a different bowl, stir together the Greek yogurt, almond milk, egg, vanilla extract, and maple syrup.

    Next, pour the wet ingredients into the dry and mix them well. Stir in the chocolate chips.

    In a well-greased pan, pour in a 1/3 of batter to form the pancakes. Cook each side for 5 minutes.
