This recipe came about during the heart of winter. The snow was blowing sideways and teleporting to the Tropics didn’t exactly go as planned. I decided to buy a pineapple and go full tropical. This happened. My roommates approved.

Feel free to mix and match with veggies and serve with any flavor of rice that you desire. I also recommend a stiff daiquiri on the side – Look at you, halfway to vacation already.
