In my opinion, nothing goes together like a fluffy marshmallow and a steaming mug of hot chocolate. So, I decided I needed to take this combo to the next level by creating it entirely from scratch. The result was an absolutely dreamy version of my favourite winter drink. If you have some extra time on your hands, try this recipe for easy homemade marshmallows and hot chocolate. The marshmallows take some effort, but you better believe they're worth it. 

Marshmallows

    Ingredients

  • 3/4 cups water divided
  • 3 envelopes gelatin
  • 2 cups sugar
  • 2/3 cups corn syrup
  • 1 pinch salt
  • 1 1/2 teaspoons vanilla
  • Confectioners sugar
  • Food dye if desired

  • Step 1

    In the bowl of an electric mixer fitted with a whisk attachment, add 1/2 cup water. Sprinkle gelatin on the surface of the water and set aside for at least 10 minutes.

    In a medium saucepan, add the sugar, corn syrup, and 1/4 cup water. Stir over high heat until the sugar has dissolved.

    Stop stirring and boil the mixture until it has reached approximately 240°F. If you don't own a candy thermometer, drop a small amount of the mixture into cold water—if it's ready, it should form a soft flexible ball.

    Beat gelatin mixture on low speed for 30 seconds. Slowly, pour the hot liquid down the side of the bowl.

    Gradually increase the speed to high and beat the mixture for approximately 12 minutes. It should increase in volume and become stiff.

    Slow the mixer and add the vanilla, salt and food dye. Mix for one more minute.

    Line a 9x13" pan with parchment paper and brush with oil. Quickly dump the marshmallow into the pan.

    Smooth the top with an oiled spatula.

    Place a square of parchment on top of the marshmallow. Let rest for at least 4 hours.

    Dust your counter with icing sugar. Remove the marshmallow from the pan and place it on the counter.

    Using a long knife, cut the marshmallow into small squares. Wipe your knife if marshmallow starts to build up on it.

  • 1 tablespoon cocoa
  • 2 tablespoons sugar
  • 1 pinch salt
  • 2 tablespoons water
  • 1 cup milk
  • 1/4 teaspoon vanilla

    If you're not just serving yourself, multiply the ingredient amounts by the number of people your serving. In a small sauce pan, add cocoa, sugar and salt.

    Add the water and whisk until there are no lumps left.

    Add the milk and vanilla. Turn on the stove to medium heat and whisk until the mixture is hot.
