It is hard to miss the little girls in green vests selling cookies this time of year. Girl Scouts know the way to all of our hearts – and stomachs – with their crumbly, chewy, and sometimes chocolatey pieces of heaven. Talk to anyone and it’s likely they have a couple boxes stocked in their freezer for the perfect treat year round.

I’ve eaten my fair share of Girl Scout cookies, but growing up, Thin Mints and Samoas were by far my favorites. When I heard General Mills was making cereal inspired by these two varieties, I knew I had to have some. Cookies for breakfast? Yes, yes, and yes. But the impatient person in me couldn’t wait to scour the grocery stores for them.

These recipes replicate the classic flavors and are perfect for breakfast, dessert, or anything in between. I love pairing these with almond milk and fruit or putting them on top of yogurt. When the cravings hit, whip up two batches: one for you and one to share. (Because we all know that sharing Girl Scout cookies is the epitome of friendship.) 

Thin Mint Cookie Cereal

    Ingredients

  • 1 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 2 Tbsp cocoa powder
  • 1/3 cup brown sugar packed
  • 1/2 cup milk
  • 1 Tbsp canola oil
  • 3/4 tsp mint extract

  • Step 1

    Preheat oven to 350° F. Line your baking pan with parchment paper or silicon baking sheet.

    Mix all of the dry ingredients together.

    Combine extract and milk together then slowly add to dry ingredients and mix.

    Add oil and mixed till everything is combined.

    Transfer to a pastry bag with a 1/4 inch round tip. Alternatively, you can put it into a plastic Ziploc bag and cut the tip.

    Hold the bag vertical and close to the baking sheet. Pipe 1/4 to 1/2 inch balls, using a wet knife to cut each. Since these don’t spread too much, you can space them relatively close together. This may take you two to three batches depending on how many trays you have.

    Bake for 12 to 15 minutes depending on the size of the balls. Let them cool for 5 minutes on the tray before removing and doing the next batch of piping.

    Optional: Once all batches are finished, dump everything onto one tray, turn off the oven, then place the tray inside with the door open while the oven cools down. This helps dry them out so they’re extra crispy. Cereal may be stored in an airtight container for a week.

Samoa Granola

    Ingredients

  • 3 cup oats
  • 1/2 cup shredded coconut
  • 1 Tbsp maca powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 tsp caramel extract optional
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup or honey
  • 1/3 cup cacao nibs or mini chocolate chips
  • 1/3 cup butterscotch chips optional

  • Step 1

    Preheat oven to 350° F. Line a baking sheet with parchment paper or silicon baking sheet.

    Combine all the dry ingredients together in a large bowl.

    In a smaller bowl, combine oil, maple syrup, and extracts. Pour into dry ingredients and mix until everything is well coated.

    Transfer to baking sheet and bake for 15 minutes. Remove from oven and lightly toss the granola. Return pan to oven and bake for another 10-15 minutes until golden.

    Let it cool before mixing in the chocolate chips and optional butterscotch chips for an extra caramel flavor. Store in an airtight container.
