Spice things up with this delicious Thai dish dressed in spicy peanut sauce. It’s savory, sweet, saucy, spicy and completely scrumptious.

Oh, and the best part is you won’t experience that awful, over-stuffed feeling after you’ve eaten (all of it) because you chose a healthy option for dinner. No more forcing yourself to eat veggies. You don’t have to force yourself to eat anything if you make it delicious enough. This dank dinner erases all the weight of a heavy meal, but keeps all the flavor.

Thai Chicken Salad with a Spicy Peanut Sauce

    Ingredients

  • Marinade
  • 1/4 cup rice vinegar
  • 1/2 teaspoon sugar
  • 1 pinch salt and pepper
  • 1/4 cup red Thai sweet chili sauce
  • 2 tablespoon water
  • 1 garlic clove, chopped
  • 1 tablespoon red Thai sweet chili sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoon soy sauce
  • 1/4 cup peanut butter
  • 4 boneless chicken breasts
  • Dressing
  • 1/2 cup vegetable oil
  • 2 tablespoon rice vinegar
  • 1/2 bunch of cilantro, chopped
  • 1 lime, juiced
  • 1 pinch salt and pepper
  • Salad
  • 5 medium sized green onions, chopped
  • 2 shredded carrots
  • 2 hearts of romaine, chopped
  • 1/2 large head of cabbage, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, shopped

  • Step 1

    Combine all of the ingredients for the chicken marinade. Mix, and place in the fridge to marinate for at least 4 hours.

    Combine all of the dressing ingredients in a small bowl and pour over the salad veggies.

    Combine the peanut sauce ingredients and pour into a small mixing bowl.

    Cook the chicken either in oven for 40 minutes at 350°F, or place in a pan and cook through. Cool, and then chop into pieces.

    Combine all of the salad ingredients in a large bowl. Add the chicken, the dressing, the peanuts & enjoy!
