Salads don’t have to be boring. This unique Thai chicken salad will make you forget that you are eating a healthy dinner filled with more than your daily fix of veggies. Spice things up with this delicious Thai dish dressed in spicy peanut sauce. It’s savory, sweet, saucy, spicy and completely scrumptious.

Oh, and the best part is you won’t experience that awful, over-stuffed feeling after you’ve eaten (all of it) because you chose a healthy option for dinner. No more forcing yourself to eat veggies. You don’t have to force yourself to eat anything if you make it delicious enough. This dank dinner erases all the weight of a heavy meal, but keeps all the flavor.

So get choppin’ and taste that vegetable rainbow.
