Make these addicting cookies in just 20 minutes, using 1 bowl, and feel good about your holiday treat choices. Coconut sugar’s low glycemic index won’t spike your blood sugar through the roof, so eating multiple is highly acceptable.
Gluten Free Vegan Peanut Butter Cookies

- 1/2 cup creamy peanut butter
- 1/3 cup coconut sugar
- 1/2 cup gluten free baking flour
- 3 tablespoon almond, soy or rice milk
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
Cream together peanut butter and coconut sugar.
Scrape down the edges of the bowl and add the flour and baking powder, mix to combine.
Add vanilla and milk of choice, mix until dough looks like this. Add additional milk 1 tablespoon at a time if dough is too crumbly to mold with your hands.
Use a tablespoon scoop to arrange cookies on a lined baking sheet. Press down on them using a fork to create that signature “peanut butter cookie look.”
Bake at 350ºF for 16-18 minutes, the cookies will be crunchy with a slight chewiness in the middle.
