But if you’re anything like me, you find it hard to resist cheap delivery Chinese food when you don’t feel like cooking. So, here’s the perfect solution: a 25-minute recipe that will curb your cravings and keep you on track with eating healthy. Introducing the no-carb, low-sodium, somehow still delicious alternative to fried rice: cauliflower.

Cauliflower Fried Rice

    Ingredients

  • 1 medium-sized cauliflower head
  • 3 cup frozen stir-fry vegetables (corn, carrots, snap peas)
  • 2 cloves of garlic
  • 6 green onions
  • 2 beaten eggs
  • 2 tablespoon sesame oil
  • 3 tablespoon soy sauce

  • Step 1

    Mince the green onion and garlic and set aside.

    Cut the cauliflower into small pieces and pulse in a food processor until it is the consistency of rice.

    Heat the sesame oil and frozen vegetables in a large frying pan over medium heat. Cook for 5 minutes.

    Add the cauliflower, green onion, and garlic. Cook for 5 minutes.
