I look forward to shopping at Whole Foods, not only for its killer salad bar but for its fresh-grind cashew butter. With the switch of a button, fresh, gooey, and warm cashew butter oozes right out. I would buy tubs and tubs of this stuff it weren't so darn expensive.

 I wanted to find an alternative way to get my cashew fix. I didn't have a grinder, but I had a food processor, which I knew could work just as well. After two ingredients and 8 minutes in the food processor, I was content with my cashew creation.

2-Ingredient Creamy Cashew Butter

    Ingredients

  • 2 cups raw cashews
  • 2 teaspoons vanilla
  • Optional: 1 teaspon salt
  • Step 1

    Combine cashews and vanilla in the food processor and pulse. Note that for the first couple minutes, the cashew mixture will look more crumbly than buttery. Resist the urge to add water (hint: water and oil don't mix well.) After about 8 minutes in the food processor, your mixture will be ready!
