Some people say that there is nothing better than good food. Well, what about good food that’s simple to make? Sounds better, right? Well, what about good friends and good food that ‘s simple to make? Even better! Last Friday night, I was introduced to the world’s easiest guacamole recipe that kicks Chipotle’s you-know-what, all thanks to the amazing chef Alex Spada. Since we’ve met, Alex has put my own cooking skills to shame with her amazing recipes, including moist vanilla cupcakes, peach cobbler and French toast. Lucky for all of you, I’m just about to give away one of her best-kept secrets: guacamole. This guacamole is something that you can make any night of the week. Feel free to eat it with chips, put it on burgers, or just to eat with a spoon. And let me tell you, taste does not suffer from the lack of preparation time. This dip is to die for. And guess what? It’s healthy, too. Buen provecho!

Servings: 3

Ingredients:

3 medium  tomatoes
3 avocados
½ red onion
¾ cup feta cheese
2 tablespoons lemon juice
2 tablespoons rice wine vinegar

Directions:

  1. Chop up avocados and tomatoes and put into a medium sized bowl.
  2. Finely chop red onion and add to avocado and tomato.
  3. Crumble feta cheese over the top.
  4. Add lemon juice and vinegar.
  5. Stir and enjoy!
