How many of us still make grilled cheese sandwiches? *raises hand* A grilled cheese sandwich is something I still whip up now when I have no clue what to eat for lunch or dinner. The ultimate comfort food, it brings back memories of the melted cheese stretching when I pull the sandwich apart and dunking it into a hot, steaming bowl of tomato soup. Even without the soup, eating one of those sandwiches reminds me of being a kid.

It's 2017, so we have more options for eating food. Gone are the days of the basic bread and melted cheese combo. This list of sandwiches are fun, exciting, and twists on a classic we all love. 

1. Cauliflower Grilled Cheese 

Never thought cauliflower could be used as a replacement for bread? For the vegans, vegetarians, or even folks looking to kickstart a healthier lifestyle, this one is perfect for y'all. 

2. Chicken Bacon Ranch Grilled Cheese

If I decide to be more adventurous with my grilled cheese sandwiches, this creation is the first one I'd make. Usually I'll put a slice of ham on mine for a little something extra, but this is next level extra for me. Yes! Yes! Yes!

3. Spinach Pesto Grilled Cheese 

I think a Spinach Pesto Grilled Cheese is a great option for a Sunday brunch. Imagine the toasted bread with the wilted spinach and zesty pesto paired with a mimosa. Salivating yet?

4. Apple and Gouda Grilled Cheese

I never imagined putting actual fruit on your sandwich, have you? Gouda cheese is smoky enough for the sweetness of the apple to mesh well with it yet the flavors won't compete for your taste buds' attention. 

5. Zucchini Waffle Grilled Cheese 

Zucchini is another one of those veggies I never thought of turning into a sandwich. Plus, who doesn't love waffles????? The mixtures of texture and tastes is going to send your taste buds into overdrive. 

6. White Pizza Grilled Cheese Sandwich

Pizza as a sandwich sounds like a plan to me. Herbs, spices, gooey cheese? I'm there...no questions asked. 

7. Ultimate Gourmet Grilled Cheese

When you're feeling Bad and Boujee, make yourself feel even fancier by making this fancy grilled cheese. Pretend you're on Chopped and see how extreme you and your friends can be.

8. Eggplant Parmigiana Grilled Cheese

My boyfriend loves eggplant parmigiana so I'd definitely make this one for him. The difference between other grilled cheese sandwiches and this one is the eggplant is cooked first then added to the sandwich. An extra step but this is going to be a hit next time you're broke but feeling healthy. 

9. Irish Grilled Cheese

St. Patrick's Day is over but that doesn't mean you can't eat anything else Irish. If I'm feeling really extra, I'd try to make the cheese green to go along with the Irish theme. 

10. Blackberry and Peach Grilled Cheese

Another great brunch or dessert option. I know it's weird to think of eating a sandwich that isn't ice cream for dessert but trust me, it'll work. Crisp peach slices with squishy berry juice dripping down your arm is going to make you wonder why you never thought of this combo before.
