Spring has finally begun and it’s time to celebrate by treating yo’self to some avocado-inspired spring meals. After all, what better way to enjoy this season than with everyone’s favorite creamy avocado.

 1. Baked Eggs inside an Avocado Bowl

We’ve all seen this food porn, but have you tried it? Cut an avocado open, take out the pit and fill it with a cracked egg. Then simply microwave it for 3 minutes for a quick, savory, nutrient-filled breakfast. For more flavor, sprinkle some salt, pepper, or cayenne pepper.

Avocados are full of good-for-you nutrients. They are one of the few fruits that contain high density lipoprotein, HDL, which can help lower bad cholesterol. Just another reason why avocados and eggs are a match made in heaven.

2. Avocado and Kale Pick-Me-Up Smoothie

Guac isn’t the only thing avocados are good for. They’re also an excellent addition to a post-workout shake. This green drink is not only low in carbohydrates, but full of antioxidants and protein. Avocados have 4 grams of protein. Kale has an incredible high source of antioxidants, vitamin C, vitamin A and immune-boosting carotenoid.

Blend ½ an avocado, ½ a cup of kale, ½ cup a of Almond Milk or preferred milk and ½ a cup of frozen mango. To sweeten, add a few pieces of broken chocolate and 2 teaspoons of agave.

3. Chilled Avocado Soup with Spicy Breadcrumbs

Treat yo’self and seven friends to the chillest soup out there. This vegetarian friendly soup is made by pureeing 1 avocado, ¼ cup of heavy whipped cream, a pinch of course kosher salt, 1½ cup of vegetable broth and 2 tablespoons of fresh lime juice. Afterwards, chill the soup for two hours.

For a finishing touch, sprinkle some spicy breadcrumbs. Finely blend two slices of your choice of bread and place the crumbs into a hot pan with melted butter. Add a pinch of cayenne pepper and ¾ teaspoon of paprika. Stir together until the crumbs are crispy and have a nice golden-brown color.

4. Avocado, Bacon & Kale on Rye Bread

This is the sandwich you need to eat this spring. It has all the ingredients every sandwich lover deserves: avocado, bacon, and kale. The mouthwatering mixture of the creamy avocado with the cripsy bacon and crunchy kale is irresistible

The final touch of this ideal foodies’ sandwich is the rye bread. The rye bread compliments the three main ingredients with a zesty flavor. Make sure to stuff your sandwich with generous amount of avocado, kale and bacon.

5. Avocado Ice Cream

Ice cream is arguable the most iconic dessert, especially during the warmer weather. Yet, when people think of ice cream they tend to refer to the traditional dairy-based rich frozen treat.  To expand your palate and boost your health, try avocado ice cream.

This vegan friendly dessert for two consist of ¹⁄ ³ cup of soy milk or preferred milk substitute, ½ avocado, 2 tablespoons of agave and ¼ tablespoon of lime or lemon juice and one frozen banana. For extra flavor, add a small handful of your favorite herb, such as mint, basil, or rosemary.

6. Avocado Fries

Move over sweet potato fries, there’s a new fry in town. These trendy fries are made by vertically cutting an avocado into slices and then removing the skin. Next, cover the slices with flour, dip them in a egg yolk and cover them with panko flakes. Bake them for 10 minutes.

For a savory dip, blend ¹⁄ ³ cup of Greek yogurt, 3 garlic cloves and 1 teaspoon of lemon juice.

7. Avocado Salad Dressing

Don’t you just get tired of those basic salad dressings? Well, this avocado dressing is anything but basic. It’s tangy flavor and creamy texture perfectly complements the sweet, crunchy veggies of any salad.

Simply blend ½ an avocado, ½ a cup of Greek yogurt, 1 tablespoon of lime juice and ¾ cup of fresh cilantro.
