There are a few weeks of winter left (or so we hope), but luckily grocery stores tend to carry butternut squash for most of the year. Maple-glazed squash is a great comfort food to take you through the winter; its sweet and spicy notes also make it a cross-seasonal dish that can be whipped up in the spring and fall.

Recipe for maple-glazed squash

Total Time: 35 minutes
Servings: 2-4
Ingredients:
1 pound of cubed butternut squash
1/2 yellow onion, sliced
2 tablespoons olive oil
2 tablespoons maple syrup
2 teaspoon salt
1 teaspoon chili flakes
1 teaspoon black pepper
Directions:
1. Preheat oven to 400ºF.
2. Toss all ingredients together.
3. Bake for 26 minutes or until the squash is tender.
