I'll just come out and say it: I struggle with keep cool in the summertime. As much as I love the sun on my skin, the ocean breeze, and the smell of pool water and sunscreen, I just constantly radiate heat. This year, I'm on a mission to hack the heat, and I first wanted to start out with the summer favorite: popsicles. But not just any popsicles, oh no, but boozy popsicles

This has been done before, so what makes these two little popsicles any different than the rest? Since I'm a hard working millennial whose money goes straight to paying off my loans, I don't have enough money to pay for popsicles molds—yes friends, it's that bad.

I naturally needed to take a crack at my version of a Mimosa pop. Recipes have been featured on Spoon before, but instead of using regular orange juice, I puréed fresh oranges and used those instead. I was quite impressed with the results! 

The next pop I wanted to try was a tart take on a raspberry popsicle. But instead of raspberries, I used pomegranate juice and seeds. Light, refreshing, and paired great with sparkling rosé!

Pomegranate Pops with Sparkling Rosé

    Ingredients

  • Barefoot sparkling rosé
  • Pom pomegranate juice
  • Pomegranate seeds

    Cut open a pomegranate and pop out the seeds. Pour some pomegranate juice and sparkling rosé into the popsicle molds, then add in some pomegranate seeds. Freeze overnight before enjoying!

  • Barefoot moscato champagne
  • Orange pureé
popsicle, dairy product, milk, cream, sweet, ice

    Make some fresh orange pureé or buy some from the store. Use the orange pureé as your base and add the champagne, then freeze overnight. The next morning, reveal a cute layered popsicle that will cool you down AND get you in the mood for brunch!
