We know you do it. You see gluten free, you turn around, and you run away as fast as you can without a second thought. You hear how easy it can be to stop eating gluten, but you know it’s impossible to resist the warm, gooey happiness of a chocolate chip cookie.

Don’t you worry your pretty little mind, because this recipe is about to rock your gluten-filled world. These, my friends, are gluten-free, almond butter chocolate chip cookies.

 

Gluten Free Almond Butter Chocolate Chip Cookies

    Ingredients

  • 1 cup unsalted almond butter
  • 3/4 cup plus 2 tablespoons brown sugar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup chocolate chips

  • Step 1

    Preheat oven to 350°F. Line baking sheet with parchment paper (optional).

     

  • Step 2

    In a medium bowl, place almond butter, brown sugar, egg, baking soda and salt.

    Stir until fully combined.

    Spoon out 1 tablespoon scoops of dough onto baking sheet, leaving plenty of room in between each cookie. Add chocolate chips.

    Bake for 10-12 minutes or until lightly browned.
